ดอก : ออกเป็นช่อจากลำต้นใต้ดิน ซึ่งแทงขึ้นมาจากเหง้า มีก้านช่อดอกยาวประมาณ 20 ซม. ทุก ๆ ดอกมีกาบสีเขียวปนแดงลักษณะโค้ง ๆ ห่อรองรับ กาบนั้นจะปิดแน่นเมื่อดอกยังอ่อน และจะบานให้เห็นดอกในภายหลัง ดอกที่ปิดกันแน่นยาวประมาณ 5 ซม. กว้างประมาณ 2.5 ซม. กลีบดอกติดกันแน่นยาวประมาณ 2 ซม. และมีสีเหลืองออกเขียวส่วนกลีบรองดอกจะยาวประมาณ 2.5 ซม. เป็นเยื่อบางๆ หุ้มอยู่ และมีกลีบเลี้ยงติดกันเป็นหลอดยาวประมาณ 1 ซม. ทั้งกลีบดอกและกลีบรองดอกนั้น ตรงปลายของมันจะแยกเป็น 3 กลีบ สามารถอุ้มน้ำ และหลุดร่วงไว โคนกลีบดอกม้วนห่อ ส่วนตรงปลายของกลีบจะผายกว้างออก [1] [3] [6]

ต้น : เป็นพรรณไม้ล้มลุก มีลำต้นอยู่ใต้ดินซึ่งเรียกว่าเหง้า ลำต้นจะมีความสูงประมาณ 50-100 ซม. ลักษณะเหง้าที่อยู่ใต้ดินจะกลมและแบน ลำต้นแท้จะมีลักษณะเป็นข้อ ๆ เนื้อในจะเป็นสีขาวหรือเหลืองอ่อน สุดท้ายของข้อนั้นจะเป็นยอดหรือต้นเทียมใหญ่เท่าแท่งดินสอดำ และกาบหรือโคนใบหุ้ม [1] [2] [3] [6]

ผล : ผลกลมโตและแข็งแรงมี 3 พู มีเส้นผ่าศูนย์กลางประมาณ 1 ซม. [1] [2] [3]

เกสร : มีอยู่ 6 อัน เกสรตัวผู้ที่ฝ่อไปจะมีสีม่วงแดง และมีจุดสีเหลือง คล้ายลิ้น ตรงปลายมนกลมสั้นกว่ากลีบดอก ส่วนที่มีลักษณะคล้ายลิ้นนั้นมีก้านเกสรตัวเมียอยู่ 1 อัน และมีอับเรณูล้อมรอบรังไข่ มีอยู่ 3 ห้อง [3] [6]

เหง้า : เมื่อแก้จะมีรสเผ็ดร้อนมก เนื้อเหง้าขิงสีเนื้ออมเหลืองๆ [3]

ใบ : เป็นชนิดใบเดี่ยว ออกสลับกันเป็นสองแถว ก้านใบยาวห่อหุ้มลำต้น ใบเขียวยาวรูปหอก ฐานใบนั้นเรียวแหลม ขอบใบจะเรียบ มีความกว้างประมาณ 2 ซม. ยาวประมาณ 20 ซม. รูปใบคล้ายใบไพล [3] [6]

ใบ : ใบเดี่ยว เรียงสลับ แบบขนาน กว้าง 1.5-2 ซม.ยาว 15-20 ซม. [1] [2]
